Your phone is the source of truth. Threads, drafts and attachments are read from the system SMS provider and kept on the device — not mirrored to someone else's server.

Local chat works peer-to-peer over Wi-Fi with no SIM and no data. The message goes straight to the person on your network — there is no middleman to read it.
